Does Kimchi Go Bad?
How long can I keep Kimchi in the fridge? Korean kimchi is one of those amazing fermented dishes that we are seeing in many non-Korean applications lately, such as tacos or fries. But as with yogurt, butter milk, or pickles, for something that seems to depend on aging, we couldn't help but wonder: How long does kimchi last after it sinks? Forever? Can it be bad? If so, how do you know? In desperation, we ask several chefs, all of whom have some relationship with kimchi. "There are about 100 different types of kimchi, so it depends... Instead of using kimchi as a noun, I like to use it as a verb: Can we kimchi that?" says Bill Kim, chef and owner in Chicago and . It depends on the age you like your kimchi. Look at the color: If it's orange, it's older. If it is dizzy, and there are bubbles inside the jar, that means it is fermenting. If the kimchi is bright red, it's fresh, without bubbles, which is how I like my kimchi. I say it like my kimchi likes my sauce. And you'd never say, "How old do you like your sauce?" '"For our purposes, we will focus on the most common type of kimchi: pogi and paechu, the Napa cabbage-variety with a hot red marinade. It's the kind of kimchi you'll most likely find in the international corridor of your supermarket. Gabriel Freeman, executive chef of , puts it clearly: "Kimchi is literally controlled as a trash. Under the right conditions it will stay for years, changing in texture and flavor as it ages. Some people prefer a very young kimchi, crispy and brilliant. Others look for a kimchi that is deeply aged, soft, fun, twisted with lactobacillus. Something deeply aged, soft, fun and condimentated with bacteria sounds like it's best reserved for the most adventurous eaters. But other chefs say it's unlikely that their old and fun kimchi is really bad. Nanam Yoon Myszka and her husband Ken run several restaurants in Bloomington's central city under the umbrella, and all those restaurants, thanks to Myszka's heritage, have Korean influence on some of the dishes. Myszka said that in South Korea, he often frequented restaurants that specialize in long-lasting kimchi, places that proudly announce his kimchi has been aged for three years or more. There is never a problem among Korean families, only because they consume so large quantities so quickly that kimchi sitting in a fridge for months is not a frequent problem. Myszka does not have a definitive answer for how long you can keep kimchi in the fridge, but did offer some strategies to keep it as fresh as possible. First, if you buy a large kimchi bottle, you should constantly avoid opening and closing the jar and expose it to the air—she suggests that you cooping a few large spoons in a separate container, take what you need for a week, and just replenish the master jar when you need. Myszka also said that you should always push the cabbage as far as possible, until the red liquid line comes above the cabbage. Having that liquid spike on the vegetables will extend your shelf line. A sign that kimchi has aged well is when he loses his crispy and becomes mushy. If you express the hesitation eating this straight, Myszka said you should throw it in a stew, like a . Or you can turn it into fried rice, or even better, sauté it into a melted iron pan with pork belly. Worse gets worse: It's pretty cheap, so when in doubt, pull out. Or you can hear the advice of a Korean mother: "If I find a little white [growth] on the repollo leaves," Myszka said, "My mother would just say, wash it and eat it!"Gwen Ihnat is the Editorial Coordinator for the A.V. So we stay with what my wife prepares. Note - my wife is a sticker to NOT use a mixing bowl (large stainless steel) that has had any type of meat/fat oil in it; she has a special that almost only touches vegetables/salted water. Note, part II - our next neighbor prepares Korean kimchi (perhaps Korean-American); they have a fridge in the garage to keep it out of the house!

Keep the smell of Kimchi out of the fridge and in the kimchi :) › › › Maintain the smell of Kimchi out of the fridge and in the kimchi :) I've been making kimchi monthly for over a year and I've always used a big glass jar to pack my cabbages in, but now I'm getting tired of my garage fridge (and soda cans and water bottles in it lol) smelling like kimchi, do you have any suggestion of containers that I could use to keep that garlic smell from my lol fridge? Hi, Brian. My mother recommends grinding fresh coffee beans, putting them on a plate or cup and putting it in the fridge. This will suck a lot of kimchi odor and extra moisture. Change the coffee every month or even better – every few weeks. Tell me how that works for you, Brian. Who was gonna fuck? Refrigerator Kimchi Maybe if I want the lottery... LOLSamsung 4.7 Cu. Ft. Thank you, but I really don't want to spend so much money on a kimchi fridge, maybe when I marry rich lol ;) I also heard about coffee. It didn't work for me, but good luck for you. We have a fridge kimchi and a gizmo that scans the kimchi fermentation. Note that the generations of Koreans fought with that problem and as our ancestors came up with the idea of keeping it out of the house, with all our technology today, all we could get was to buy a separate fridge. We have a kimchi fridge at home. When I'm in hotels, I only live with him. What my mother taught me is to wrap the whole thing in clear plastic paper (at the top of the lid). It's an extra step when you're getting your kimchi, but it works! (Just keep reusing until you feel sticky, and then use new things) It was skeptical, but my fridge smells like... a fridge! :) I tried the coffee thing and it really worked neutralized the smell forms my last kimchi jar. I just finished fermenting this new batch so I will wrap the plastic containers of it right now, thank you guys MUCH for your help!! It's great to hear that Brian worked! I'm glad your fridge didn't last! Good morning, Brian! I keep my kimchi in a double plastic bag (each tied separately) and then sealed in any useful storage container (usually something like a lock and lock, with the rubber joint on the lid tabs on the sides). As I keep the outside bag and the clean storage container, I don't have a kimchi smell. One day I plan to get a kimchi fridge, but not soon. Short in space and short at $$. In the meantime, I keep the actions of Arm and Hammer healthy. A box in the fridge and one in the freezer (where for some reason kimchi odors also seem to permeate) and change regularly. The soda and things I can live with. A little embarrassing with the guests, but skillful. It's the milk that drives me crazy because the flavor really comes in and enters the milk. Kimchi with Earl Grey flavor is not delicious. If you keep your kimchi in sealed containers like a glass box, there should be no problem with the smell. In addition, it is important to remove any kimchi residues outside the container that may result from manipulation. You can also test activated carbon. It is used in fish tank filters (and I imagine there are other uses) and can be purchased anywhere where fish tank supplies are found. I bought some in small bags that can get into the fridge. When it was time to replace them (more than a year later) my husband found a container that seemed, and it was the same size as a milk cardboard. The guy at the store showed him these mesh bags that are used in the fish tanks to hold the activated carbon. The idea is to throw away the coal used and then fill the bags. Much cheaper than buying prefilled bags. I stayed in a hotel recently, and I had a leftover kimchi soup that my daughter and I had gotten in a Korean restaurant. The next morning I opened the fridge – and OH MY GOOD – I was afraid to leave the hotel and have everyone wonder what I had done on the ground with its refrigerator. I called my daughter and made her pick up the activated coal from a local marriage. We pulled the kimchi soup and put two activated carbon bags. By that night the smell had gone completely. When I put my kimchi at home in zipper freezer bags, then I put them in the plastic lock cap containers. I do not usually have too many problems with the smell then, unless, as indicated in the tastingkorea, you leave residues of salsa out of the bag or container. Good luck! You could consider this – often college students buy small refrigerators for their bedrooms. I found out that they often sell them super cheap, or just leave them when they leave school at the end of the year – they often can't transport them home. If you can put your hands on one of those bargains, you can have a kimchi fridge with space for your beer or soda to start! Advert Korean cooking forums AdvertisingCopyright © 2021 Maangchi LLC.
